What is the difference between ceremonial cacao and regular cacao?

Which cacao variety is best for ceremonies?
Criollo is considered the noblest cacao variety due to its complex flavour profile and the highest concentration of active compounds of all cacao types. How much ceremonial cacao should I use per serving?
For a ceremonial dose use 35-40 grams of cacao paste or equivalent amount of powder, dissolved in warm water at approximately 70-80°C (not boiling, to preserve the active compounds). For daily use as a ritual drink, 15-20 grams is a nice portion.
How do I store ceremonial cacao?
Store cacao in a cool, dry place (15-20°C) in an airtight container, preferably in the original bag or a sealed jar. Avoid direct sunlight and moisture, as cacao absorbs odours quickly. Properly stored, ceremonial cacao keeps for months.
